Zucchini and Spinach Salad
Marinate the zucchini in the salad dressing for about 30 minutes, and then just before serving, toss with fresh baby spinach. It is so good served with freshly baked bread. This is a wonderfully easy lunch time main coarse salad.
Method
- Make the dressing. Combine all the ingredients together and whisk well. Correct the seasoning.
- Cut the zucchini into thin diagonal slices. Combine the zucchini, spring onion, red pepper and chili and in bowl and toss with half of the salad dressing. Set aside in the refrigerator for 30 minutes.
- Before serving, place the spinach leaves in a bowl and toss with the remaining salad dressing. Add the zucchini, toss well and serve at once.
