Zimbali Tomato Sauce
Recently a group of old friends got together to spend the weekend in Zimbali, on the Kwa Zulu Natal coast and did we cook up a storm! Ammi’s special tomato sauce served with the braai pap was just too delicious, and here is the recipe.
Method
- Heat the butter and olive oil in a saucepan and fry the onions until softened. Remove the onions from the saucepan and set aside.
- Sauté the mushrooms in the same saucepan until cooked. Add the onions and tomatoes and the rest of the ingredients.
- Simmer gently, stirring every now and then, until the sauce thickens slightly. (approximately 20 minutes)
- Allow the sauce to cool and refrigerate. Reheat when ready to serve.
