Zimbali Tomato Sauce

Recently a group of old friends got together to spend the weekend in Zimbali, on the Kwa Zulu Natal coast and did we cook up a storm! Ammi’s special tomato sauce served with the braai pap was just too delicious, and here is the recipe.

Method

  1. Heat the butter and olive oil in a saucepan and fry the onions until softened. Remove the onions from the saucepan and set aside.
  2. Sauté the mushrooms in the same saucepan until cooked. Add the onions and tomatoes and the rest of the ingredients.
  3. Simmer gently, stirring every now and then, until the sauce thickens slightly. (approximately 20 minutes)
  4. Allow the sauce to cool and refrigerate. Reheat when ready to serve.
