Watermelon with Feta Cheese and Peppadew Dressing
Serve crisp, sweet watermelon slices with this versatile feta and peppadew dressing on a bright, sunny day. It is the perfect accompaniment to grilled chicken.
Method
- Arrange the watermelon slices and cherry tomatoes on a platter, scatter the shredded basil over and drizzle with olive oil.
- Make the dressing. Blend the feta cheese, yogurt and peppadews in a food processor for 1 to 2 minutes until smooth. Refrigerate the dressing until needed.
- Serve the watermelon salad with the dressing on the side.
