Watermelon Curry

This recipe is from Rajasthan. This is arid desert region and the Rajasthani had to rely on food what was locally available. Watermelons were one of the few fruits available in summer and are used to make an interesting curry. The flavour should be hot, sweet and sour, hence the generous use of chillie powder. Serve it with rice or as a side dish.

Method

  1. Blend 2 cups of watermelon in a food processor.
  2. Heat the oil in a saucepan and add the spices. Stir the spices for 2 minutes over medium heat. Add the watermelon puree and simmer until the liquid is reduces to a third. Add the lime juice and sugar to taste.
  3. Add the watermelon just before serving and cook over low heat for 2 minutes, gently tossing it until all the pieces are covered in the spice mixture. Serve at once
