Tomato and Fresh Basil Soup

This is the perfect summer soup when fresh tomatoes are at their most flavoursome.

Method

  1. Heat oil and butter in a large saucepan, add the onions and cook gently for 5 minutes. Do not allow onions to brown.
  2. Stir in the tomatoes, garlic, stock, wine and sun-dried tomatoes. Bring to the boil and simmer over low heat, stirring occasionally, for 20 minutes.
  3. Place the soup in a food processor, add the shredded basil, and blend until smooth.
  4. Transfer the soup back to the saucepan, add the cream and heat through, stirring continuously. Add more stock if the soup is too thick. Season to taste with salt and pepper and serve, garnished with basil leaves.
