Thai Pork Mint and Chilli Salad

All the typical Thai tastes, hot, sour, sweet and salty are combined in this fresh salad. Serve it on a slice of ripe pineapple.

Method

  1. 400 gm pork fillet, trimmed
  2. 2 lemongrass stalks
  3. 2 cloves of garlic
  4. 2 coriander roots
  5. 2 small red chillies, seeded
  6. 15 ml (1 tablespoon) grapeseed oil
  7. 60 ml (1/4 cup) Thai fish sauce
  8. 60 ml (4 tablespoons) fresh lime juice
  9. 20 ml (4 teaspoons) sugar
  10. 4 shallots, finely chopped
  11. 5 ml (1 teaspoon) ground roasted rice
  12. 250 ml (1 cup) fresh coriander leaves
  13. 250 ml (1 cup) fresh mint leaves
  14. 1 fresh, ripe pineapple
