Thai Pork Mint and Chilli Salad
All the typical Thai tastes, hot, sour, sweet and salty are combined in this fresh salad. Serve it on a slice of ripe pineapple.
Method
- 400 gm pork fillet, trimmed
- 2 lemongrass stalks
- 2 cloves of garlic
- 2 coriander roots
- 2 small red chillies, seeded
- 15 ml (1 tablespoon) grapeseed oil
- 60 ml (1/4 cup) Thai fish sauce
- 60 ml (4 tablespoons) fresh lime juice
- 20 ml (4 teaspoons) sugar
- 4 shallots, finely chopped
- 5 ml (1 teaspoon) ground roasted rice
- 250 ml (1 cup) fresh coriander leaves
- 250 ml (1 cup) fresh mint leaves
- 1 fresh, ripe pineapple
