Tabbouleh

Tabbouleh is a parsley and cracked-wheat salad and is delicious served with roast chicken or grilled fish. Make sure that the parsley is washed and dried well and chop it by hand; the food processor tends to mush it up.

Method

  1. Soak the cracked-wheat in hot water for 45 minutes. Squeeze out the water and put the cracked-wheat in a large bowl.
  2. Toss the spring onions, parsley and mint with the cracked-wheat. Add the tomatoes, drizzle in the olive oil and toss again.
  3. Season with salt and pepper and toss in the lemon juice just before serving.
