Szegediner Gulyas

My friend Annelize shared this delicious recipe for a traditional Hungarian stew and it is perfect winter warming food to serve with buttered noodles, sprinkled with poppy seeds.

Method

  1. Melt the butter in a large saucepan. Add the pork, onions, garlic and paprika and stir-fry for 5 minutes. Add the water and simmer for 1 hour.
  2. Add the sauerkraut and simmer for 30 minutes until the meat is tender.
  3. Mix the cake flour with the sour cream to a paste and add it to the stew. Simmer for 5 minutes, stirring continuously until the sauce thickens. Season to taste with salt and pepper and serve with noodles.
