Sweet and Spicy Cashew Nuts
My friend Pinks knows how to celebrate the Christmas holidays and this year is no exception. Over the weekend she invited the happy crowd for drinks and snacks and produced these fantastic sweet and spicy cashew nuts.
Method
- Preheat the oven to 180 º (350 ºF).
- Place the nuts in a roasting tin and bake in the oven for about 10 minutes until golden.
- Combine the rest of the ingredients in a small mixing bowl and mix well.
- Heat a large frying pan and add the roasted nuts. Sprinkle the spice mixture over the nuts and cook over medium heat stirring the nuts with a wooden spoon to prevent sticking and burning. The sugar will melt and coat the nuts. When golden, remove from the heat and spread the nuts on a lightly oiled baking sheet. Allow to cool and hide the nuts in a airtight container until you are ready to serve.
