Sweet and Sour Pumpkin
I just love the sweet and sour taste of the roasted pumpkin with lots of mint and like to serve it with grilled lamb and roast potatoes.
Method
- Heat the oil and garlic cloves in a large frying pan. Add the pumpkin and cook until it chars around the edges, tossing and turning it frequently.
- Add the sugar, vinegar and mint to the pumpkin and season with salt and ground black pepper. Cook for 2 minutes, tossing the frying pan. Serve immediately.
