Sweet and Sour Pumpkin

I just love the sweet and sour taste of the roasted pumpkin with lots of mint and like to serve it with grilled lamb and roast potatoes.

Method

  1. Heat the oil and garlic cloves in a large frying pan. Add the pumpkin and cook until it chars around the edges, tossing and turning it frequently.
  2. Add the sugar, vinegar and mint to the pumpkin and season with salt and ground black pepper. Cook for 2 minutes, tossing the frying pan. Serve immediately.
