Sugar-Seared Salmon with Cream Sauce

Method
- Mix sugar, salt, garlic salt and black pepper in a small mixing bowl. Brush the salmon with water and sprinkle on both sides with the sugar mixture.
- Melt the butter in a large frying pan. Add the salmon and cook until crusty on the outside and just opaque on the inside; about 4 minutes on each side depending on the thickness of the salmon fillets.
- Transfer the salmon to a serving plate and keep warm. Add the fish stock and cream to the frying pan. Boil until the sauce thickens enough to coat the spoon, scraping up all the brown bits, about 4 minutes.
- Spoon the sauce over the salmon and top with spring onions. Serve immediately
