Strawberry Sorbet
Make this sorbet when strawberries are in season and indulge in a luscious fat free treat.
Method
- Wash and hull the strawberries. Blend the water, caster sugar, lemon juice and orange liqueur in a food processor. Add the strawberries and blend for 2 minutes. Push the pulp through a sieve into a flat stainless steel container and freeze.
- Beat the egg whites with the extra sugar until the sugar has dissolved. Flake the frozen strawberry ice and fold the egg white mixture through. Blend for 1 minute.
- Return to the stainless steel container and freeze for at least 6 hours before serving.
