Strawberry Sorbet

Make this sorbet when strawberries are in season and indulge in a luscious fat free treat.

Method

  1. Wash and hull the strawberries. Blend the water, caster sugar, lemon juice and orange liqueur in a food processor. Add the strawberries and blend for 2 minutes. Push the pulp through a sieve into a flat stainless steel container and freeze.
  2. Beat the egg whites with the extra sugar until the sugar has dissolved. Flake the frozen strawberry ice and fold the egg white mixture through. Blend for 1 minute.
  3. Return to the stainless steel container and freeze for at least 6 hours before serving.
