Strawberry Cheesecake Semifreddo

This is a stunning dessert to serve on a warm sunny day. Prepare the dessert a day in advance and remove it from the freezer 30 minutes before serving. Serve with whipped cream and strawberries.

Method

  1. Grease a 23 cm spring-form pan.
  2. Blend 300 g strawberries and 150 g sugar in a food processor until smooth. Set aside.
  3. Combine biscuits and melted butter and press into the base of a 23 cm spring-form pan. Freeze for 15 minutes.
  4. Blend the cheese, custard, vanilla essence and remaining sugar (add more to taste if preferred) until smooth. Spoon the cheese over the biscuit base.
  5. Drizzle with the strawberry sauce, then use a skewer to swirl it through.
  6. Freeze for at least 2 hours or over night. Remove from the freezer 2 hours before serving.
