Strawberry Cheesecake Semifreddo
This is a stunning dessert to serve on a warm sunny day. Prepare the dessert a day in advance and remove it from the freezer 30 minutes before serving. Serve with whipped cream and strawberries.
Method
- Grease a 23 cm spring-form pan.
- Blend 300 g strawberries and 150 g sugar in a food processor until smooth. Set aside.
- Combine biscuits and melted butter and press into the base of a 23 cm spring-form pan. Freeze for 15 minutes.
- Blend the cheese, custard, vanilla essence and remaining sugar (add more to taste if preferred) until smooth. Spoon the cheese over the biscuit base.
- Drizzle with the strawberry sauce, then use a skewer to swirl it through.
- Freeze for at least 2 hours or over night. Remove from the freezer 2 hours before serving.
