Stir-Fried Beef and Broccoli

Stir-fried beef and broccoli, a favourite item on menus in Chinese restaurants, is easily prepared at home. Serve it piping hot, with plain boiled rice.

Method

  1. Mix together the salt, pepper and corn flour and rub it into the beef slices.
  2. Tim the broccoli flowerets and cut the stalks lengthways into slices.
  3. Heat 3 tablespoons of oil in a heavy-bottomed frying pan and stir-fry the beef and onion for 3 minutes. Remove and keep warm.
  4. Add the remaining oil to the pan and stir-fry the broccoli for 3 minutes. Add the stock and brown sugar and cook for 2 to 3 minutes.
  5. Return the beef and onions to the pan; then add the soy sauce, sherry, ginger and garlic. Cook for 2 minutes.
  6. Spoon the beef and broccoli into a warmed serving dish, sprinkle with the cashew nuts and garnish with the spring onions. Serve immediately.
