Stir-Fried Beef and Broccoli
Stir-fried beef and broccoli, a favourite item on menus in Chinese restaurants, is easily prepared at home. Serve it piping hot, with plain boiled rice.
Method
- Mix together the salt, pepper and corn flour and rub it into the beef slices.
- Tim the broccoli flowerets and cut the stalks lengthways into slices.
- Heat 3 tablespoons of oil in a heavy-bottomed frying pan and stir-fry the beef and onion for 3 minutes. Remove and keep warm.
- Add the remaining oil to the pan and stir-fry the broccoli for 3 minutes. Add the stock and brown sugar and cook for 2 to 3 minutes.
- Return the beef and onions to the pan; then add the soy sauce, sherry, ginger and garlic. Cook for 2 minutes.
- Spoon the beef and broccoli into a warmed serving dish, sprinkle with the cashew nuts and garnish with the spring onions. Serve immediately.
