Spaghetti with Spring Onion Sauce

This is a delicious vegetarian pasta that is ready to serve in 30 minutes. It is perfect for a quick family supper.

Method

  1. Cook the spaghetti in boiling salted water until al dente.
  2. While the spaghetti is cooking, heat 2 tablespoons of the olive oil in a sauce pan and cook the spring onions and garlic for 5 minutes. Transfer the spring onions to a blender and add the lemon zest, remaining oil and 125 ml (1/2 cup) pasta-cooking water. Process until smooth and season to taste with salt and black pepper..
  3. Drain the spaghetti and toss with the spring onion puree. Serve at once with Parmesan cheese.
