Spaghetti with Spring Onion Sauce
This is a delicious vegetarian pasta that is ready to serve in 30 minutes. It is perfect for a quick family supper.
Method
- Cook the spaghetti in boiling salted water until al dente.
- While the spaghetti is cooking, heat 2 tablespoons of the olive oil in a sauce pan and cook the spring onions and garlic for 5 minutes. Transfer the spring onions to a blender and add the lemon zest, remaining oil and 125 ml (1/2 cup) pasta-cooking water. Process until smooth and season to taste with salt and black pepper..
- Drain the spaghetti and toss with the spring onion puree. Serve at once with Parmesan cheese.
