Smoked Trout with Apple and Horsradish Cream
Spoon the trout onto salad greens and serve with freshly baked brown bread as a starter or a light lunch.
Method
- Combine the trout, apple, celery and spring onions in a mixing bowl.
- Wisk the sour cream, mayonnaise, lemon juice and horseradish well. Fold it gently into the trout taking care not to break up the trout. The trout can be prepared a day in advance. Serve on a bed of salad greens with freshly baked brown bread.
