Smoked Trout with Apple and Horsradish Cream

Spoon the trout onto salad greens and serve with freshly baked brown bread as a starter or a light lunch.

Method

  1. Combine the trout, apple, celery and spring onions in a mixing bowl.
  2. Wisk the sour cream, mayonnaise, lemon juice and horseradish well. Fold it gently into the trout taking care not to break up the trout. The trout can be prepared a day in advance. Serve on a bed of salad greens with freshly baked brown bread.
