Sherry Cream

Years ago my friend Colwynne shared this recipe for sherry cream with me and looking through my old recipe book I was very happy to rediscover this delightful treat. Kind of a sherry panna cotta. It is very good served with a sauce easily made by pureeing a tin of apricots.

Method

  1. Whip the cream, add the eggs yokes and whip again
  2. Add the condensed milk and milk. Mix well.
  3. Sponge the gelatine in the cold water. Heat in the microwave until dissolved.
  4. Add the sherry to the gelatine and then add it to the cream mixture. Mix well.
  5. Beat the egg whited until stiff and fold into the sherry cream. Spoon the sherry cream into individual dessert cups and refrigerate until set. Serve and enjoy.
