Sherry Cream
Years ago my friend Colwynne shared this recipe for sherry cream with me and looking through my old recipe book I was very happy to rediscover this delightful treat. Kind of a sherry panna cotta. It is very good served with a sauce easily made by pureeing a tin of apricots.
Method
- Whip the cream, add the eggs yokes and whip again
- Add the condensed milk and milk. Mix well.
- Sponge the gelatine in the cold water. Heat in the microwave until dissolved.
- Add the sherry to the gelatine and then add it to the cream mixture. Mix well.
- Beat the egg whited until stiff and fold into the sherry cream. Spoon the sherry cream into individual dessert cups and refrigerate until set. Serve and enjoy.
