Roasted Carrots with Feta and Olives

Method

  1. Preheat the oven to 180 ºC (350 ºF). Oil a baking tray.
  2. Place the carrots in a bowl and add the olive oil and spices. Toss well to coat the carrots. Place the carrots in the baking tray and roast in the oven for 40 minutes until tender.
  3. Place the carrots in a serving dish and add the feta cheese and olives. Scatter with the mint leaves and serve.
