Roast Fillet of Beef with Sesame Seeds

Fillet of beef, the most tender of all beef cuts, is at its best when served crusty brown outside and pink to rare inside. It cooks in a short time and should be roasted in a very hot oven.

Method

  1. Preheat oven to 220 ºC.
  2. Take the whole fillet; rub in with garlic, brown sugar, soy sauce and sesame oil. Leave in the fridge overnight
  3. Press the sesame seeds well into the meat. Roast the fillet in a roasting tin 20 to 25 minutes, cover with aluminium foil and allow to rest for 10 minutes.
  4. Slice the fillet and serve with wilted spinach salad and herb roasted potatoes.
