Ricotta Cheese Pancakes
My sister in law, Petro, made these amazingly fluffy, tender pancakes over Christmas. These are the best American style pancakes I’ve ever tasted and we enjoyed them warm, oozing with melted butter and maple syrup.
Method
- Sift the dry ingredients together.
- Combine the eggs, ricotta cheese and milk and whisk well.
- Fold in the dry ingredients.
- Beat the egg whites until stiff, and fold into the batter.
- Heat the butter and oil in a frying pan and spoon 3 tablespoons of batter onto the pan. Turn the pancake when bubbles that will form on the surface, begin to break. Cook until done and lightly browned.
- Serve hot with butter and maple syrup.
