Rhubarb Apple and Pear Crumble

Apple crumble, served with pouring cream or vanilla ice cream, is a most comforting dessert. I’ve added rhubarb and pear with very good results.

Method

  1. Preheat the oven to 180 ºC (350 ºF). Grease a 20cm and 5 cm deep round baking dish.
  2. Make the crumble. Blend all the ingredients in a food processor until it resembles crumbs.
  3. Mix the fruit with the sugar and place them in the prepared baking dish.
  4. Sprinkle the crumble mix over the fruit, and, using the flat of your hand, press down quite firmly all over. The more tightly it is packed the crispier it will be.
  5. Bake in the oven for 40 minutes until the crumble is golden brown by which time the fruit will be cooked.
  6. Let the crumble rest for 15 minutes before serving.
