Quick Pickles

Method

  1. Place the onion and cucumber slices in a glass dish. Set aside.
  2. Bring the rest of the ingredients to a boil with 125 ml (1/2 cup) water. Simmer for 5 minutes. Pour over the onion and cucumber and cover loosely. Let it cool down completely and refrigerate in a airtight container for up to 2 weeks.
