Potato Salad with Fennel

To me, potato salad with mayonnaise is real picnic food and this recipe goes particularly well with roast chicken drumsticks.

Method

  1. Boil potatoes in salted water until soft. Allow potatoes to cool, peel and cut into thick slices. Add half of the fennel.
  2. Mix mayonnaise and crème fraise well together and gently fold into the potatoes slices and fennel. Season to taste with salt.
  3. Garnish with ground 3 colour pepper and the rest of the fennel.
