Potato Salad with Fennel
To me, potato salad with mayonnaise is real picnic food and this recipe goes particularly well with roast chicken drumsticks.
Method
- Boil potatoes in salted water until soft. Allow potatoes to cool, peel and cut into thick slices. Add half of the fennel.
- Mix mayonnaise and crème fraise well together and gently fold into the potatoes slices and fennel. Season to taste with salt.
- Garnish with ground 3 colour pepper and the rest of the fennel.
