Pork with Galliano and Herbs

Galliano is an Italian liquorice liqueur that compliments the stir-fried pork and fresh herbs perfectly. Serve with preserved figs and wait for the compliments.

Method

  1. Slice pork fillet diagonally into 2 cm slices. Pat gently to flatten slightly and season with freshly ground black pepper.
  2. Heat oil and butter in a large frying pan. Add half the herbs and 1/3 of the pork. Brown meat over high heat. The cooking time should not take more than 1 minute. Remove the pork to a plate and keep warm while stir-frying the rest of the pork.
  3. Finally, when all the pork is browned, return the pork to the frying pan with the rest of the herbs. Pour the Galliano over and ignite. As the flames die down, season the pork with salt.
  4. Transfer the pork to a serving platter, coat with the lovely pan juices and serve immediately, garnished with herbs and preserved figs
