Pork with Fresh Pineapple
This is a quick stir-fry using pork fillet and sweet, ripe pineapple. Cook the pork over high heat, stirring constantly, until just cooked. Do not overcook or it will become tough.
Method
- Cut the pork in very thin slices with a very sharp knife.
- Heat oil in a heavy-bottomed frying pan, add the garlic and spring onions and cook for 1 minute. Remove from the frying pan.
- Heat the frying pan to very hot. Add the pork in 2 to 3 batches and stir-fry each batch for 3 minutes. Return pork, garlic and spring onions to the frying pan. Add the pineapple pieces, fish sauce and lemon juice. Toss well. Just before serving, sprinkle with coriander leaves and chopped mint; toss lightly. Serve on a bed of wilted spinach.
