Poor Man’s Caviar

Serve poor man’s caviar well chilled as a first course with crisp dry toast or warm triangles of pita bread.

Method

  1. Preheat oven to 180 ºC (350 ºF).
  2. Prick the eggplants all over with a fork. Place on a baking sheet and bake for 1 hour. Cool eggplants, cut in half and scrape the flesh into the bowl of a food processor. Blend until roughly chopped. Transfer to a mixing bowl.
  3. Add garlic, soy sauce, olive oil, tomato, dried sultanas and parsley. Mix well and season to taste with salt and pepper.
  4. Spoon into individual serving dishes, cover with cling wrap and leave in the refrigerator until well chilled. Serve garnished with the pine nuts.
