Poor Man’s Caviar
Serve poor man’s caviar well chilled as a first course with crisp dry toast or warm triangles of pita bread.
Method
- Preheat oven to 180 ºC (350 ºF).
- Prick the eggplants all over with a fork. Place on a baking sheet and bake for 1 hour. Cool eggplants, cut in half and scrape the flesh into the bowl of a food processor. Blend until roughly chopped. Transfer to a mixing bowl.
- Add garlic, soy sauce, olive oil, tomato, dried sultanas and parsley. Mix well and season to taste with salt and pepper.
- Spoon into individual serving dishes, cover with cling wrap and leave in the refrigerator until well chilled. Serve garnished with the pine nuts.
