Pineapple Jam

Homemade pineapple jam is quick and easy to make and is delicious served with scones and cream or spread on hot buttered toast.

Method

  1. Bring the grated pineapple and water to the boil and simmer for 30 minutes, until the pineapple pulp is soft.
  2. Add the sugar and lemon juice and boil for 30 minutes until the jam is thickened.
  3. Pour the jam into a sterilized glass jam jar and seat with a tight lid. Allow to cool down completely and store in the refrigerator.
