Pecan Meringue Pie
Don’t be alarmed by the addition of savoury biscuits to this scrumptious pecan pie. It is sure to become a family favourite.
Method
- Preheat the oven to 180 ºC (350 ºF). Grease a 23 cm pie dish.
- Beat the egg whites until very stiff. Add the caster sugar 1 tablespoon at a time, making sure that the whites absorb the sugar before adding the next tablespoon.
- Add the vanilla essence and mix well.
- Place the broken biscuits and pecan nuts in a mixing bowl and add the baking powder. Mix well.
- Fold the biscuits and nuts into the meringue. Spoon the meringue into the pie dish and bake for 30 minutes until light brown.
- Allow the pie to cool. Top with the whipped cream and dust with cocoa powder just before serving.
