Pecan Meringue Pie

Don’t be alarmed by the addition of savoury biscuits to this scrumptious pecan pie. It is sure to become a family favourite.

Method

  1. Preheat the oven to 180 ºC (350 ºF). Grease a 23 cm pie dish.
  2. Beat the egg whites until very stiff. Add the caster sugar 1 tablespoon at a time, making sure that the whites absorb the sugar before adding the next tablespoon.
  3. Add the vanilla essence and mix well.
  4. Place the broken biscuits and pecan nuts in a mixing bowl and add the baking powder. Mix well.
  5. Fold the biscuits and nuts into the meringue. Spoon the meringue into the pie dish and bake for 30 minutes until light brown.
  6. Allow the pie to cool. Top with the whipped cream and dust with cocoa powder just before serving.
