Passion Fruit Kisses

These melt-in-the-mouth, lightly textured biscuits are equally wonderful left plain or filled with this seductive sweet-tart passion fruit buttercream.

Method

  1. Preheat the oven to 180 °C (350 °F). Grease 2 baking sheets.
  2. Combine the biscuit ingredients in an electric mixer and beat until everything combines to form a softish dough. Roll the dough into 40 small balls and place on the prepared baking sheets, spaced a little apart. Dip a fork into cold water and use the back of it to slightly flatten the biscuits, remembering to dip the fork in water after each biscuit.
  3. Bake for 15 minutes until the biscuits are lightly golden. Leave on the baking tray for a couple of minutes to firm and then remove to a rack to cool completely.
  4. Make the butter cream. Beat the butter until creamy. Add the sifted icing sugar, mix well and add the passion fruit and orange juice. Mix well.
  5. Sandwich the biscuits together with the buttercream, and chill in the fridge for 1 hour before serving. The biscuits can be stored in a lidded container and can also be frozen.
