Passion Fruit Kisses
These melt-in-the-mouth, lightly textured biscuits are equally wonderful left plain or filled with this seductive sweet-tart passion fruit buttercream.
Method
- Preheat the oven to 180 °C (350 °F). Grease 2 baking sheets.
- Combine the biscuit ingredients in an electric mixer and beat until everything combines to form a softish dough. Roll the dough into 40 small balls and place on the prepared baking sheets, spaced a little apart. Dip a fork into cold water and use the back of it to slightly flatten the biscuits, remembering to dip the fork in water after each biscuit.
- Bake for 15 minutes until the biscuits are lightly golden. Leave on the baking tray for a couple of minutes to firm and then remove to a rack to cool completely.
- Make the butter cream. Beat the butter until creamy. Add the sifted icing sugar, mix well and add the passion fruit and orange juice. Mix well.
- Sandwich the biscuits together with the buttercream, and chill in the fridge for 1 hour before serving. The biscuits can be stored in a lidded container and can also be frozen.
