Oozy Chocolate Pudding

My neighbour’s daughter, Nina, found this recipe in an old magazine and treated us by turning out these perfectly delicious chocolate puddings, oozing velvety rich chocolate sauce. We added a bit of almonds and lined the moulds with wax paper just to be sure they’ll turn out easily.

Method

  1. Preheat oven to 200 ºC (400 ºF). Grease 4 individual moulds with butter, dust with flour and line with rounds of wax paper.
  2. Make the filling. Melt the chocolate over simmering water. Stir in the cream and chill the filling for 15 minutes.
  3. Make the batter. Beat the sugar and butter together. Add the eggs gradually and beat the mixture very well. Add the almond essence and mix well. Fold in the flour, cocoa powder and ground almonds.
  4. Half fill the moulds with batter; add a spoonful of filling and then top with the remaining batter.
  5. Bake the puddings for 10 minutes until set. Turn the puddings out onto serving plates and dust with icing sugar. Serve while still warm.
