Mussels with Chilli Tomato and Parsley

Quick and easy to prepare, this is a lovely dish to prepare when you don’t have much time in the kitchen. Serve in warmed soup plates with lots of crusty bread.

Method

  1. Heat the olive oil in a large saucepan. Add the garlic and chilli and stir fry briefly. Add the tomatoes and wine cook for 2 minutes. Add the mussels and put the lid on. Shake the saucepan around and go it until the mussels have opened. About 3 minutes. Discard any mussels that are not opened.
  2. Add the parsley and season with salt and black pepper and toss the mussels a few times.
  3. Spoon into the warmed soup plates and serve at once.
