Mushroom Fritters with Chicken and Vegetable Stir Fry
These light and tasty fritters are just great served with the chicken and vegetable stir fry. It is one of the most popular choices at the Dreams Restaurant in Soweto.
Method
- Make the batter for the fritters. Whisk the eggs in a bowl and slowly whisk in the self raising flour and bicarbonate of soda. The batter must be smooth. Set aside.
- Combine the chicken, oil, soy sauce, garlic, ginger, honey and sweet chilli sauce. Season with salt and pepper. Set aside to marinate for 30 minutes.
- Heat a bit of oil in a large frying pan. Brown the chicken strips over high heat and remove from the pan with a slotted spoon. Set aside.
- Add the vegetables to the frying pan and cook for 6 minutes.
- Meanwhile heat oil in a saucepan to deep fry the fritters. Add the finely diced mushrooms to the better and stir well. Deep fry tablespoons of the mushroom mixture in the oil until golden brown Remove from the oil with a slotted spoon and drain on kitchen paper.
- When the vegetables are ready, still crisp tender, add the chicken and cook for 5 minutes. Sprinkle with the sesame oil and serve with the mushroom fritters.
