Mushroom and Chestnut Cream Soup
Drive away the winter blues with a bowl of steaming hot mushroom and chestnut cream soup. It is delicious served with crusty home baked bread.
Method
- Sauté the onions and garlic in the butter in a large saucepan for 10 minutes. Add the mushrooms and sauté until the mushrooms are soft. Add the chestnuts and stock. Simmer the soup for 20 minutes.
- Let the soup cool slightly and liquidize until smooth. Stir in the cream and season to taste with salt and freshly ground black pepper. Reheat gently before serving .
