Mushroom and Chestnut Cream Soup

Drive away the winter blues with a bowl of steaming hot mushroom and chestnut cream soup. It is delicious served with crusty home baked bread.

Method

  1. Sauté the onions and garlic in the butter in a large saucepan for 10 minutes. Add the mushrooms and sauté until the mushrooms are soft. Add the chestnuts and stock. Simmer the soup for 20 minutes.
  2. Let the soup cool slightly and liquidize until smooth. Stir in the cream and season to taste with salt and freshly ground black pepper. Reheat gently before serving .
