Mealie Bread

Serve mealie bread warm from the oven with lots of butter.

Method

  1. Preheat oven to 180 ºC (350 ºF). Grease and line a 22 cm loaf tin.
  2. Beat the eggs, milk, oil and sugar well together.
  3. Mix dry ingredients and then stir it into the egg mixture.
  4. Add the sweetcorn and whole mealie kernels. Mix well. The mixture will be quite liquid.
  5. Spoon the mixture into the prepared loaf tin and bake for about 1 ½ hours until a skewer inserted into the loaf comes out clean. Cover the mealie bread with aluminum foil for the last ½ hour to prevent it from baking to brown. Serve warm from the oven.
