Lemon and Orange Sorbet

You don’t need and ice cream machine to make this delightful lemon and orange sorbet. Serve in tall stemmed glasses garnished with a sprig of mint.

Method

  1. Place the sugar in a saucepan and add the water. Heat slowly until the sugar dissolves.
  2. Add fruit juices and orange rind and pour into a sallow pan. Place in the freezer and freeze until the mixture is half frozen.
  3. Beat the egg whites to a stiff snow. Add the caster sugar and continue beating until shiny.
  4. Whisk the half frozen fruit mixture until smooth. Gently fold in the egg whites. Transfer the sorbet to a stainless steel container and freeze until hard.
  5. To serve, scoop the sorbet into tall stemmed glasses and serve at once. The sorbet melts quickly.
