Lamb Chops with Pistachio Crumb Topping
Lamb chops are always a favourite and the crunchy nut topping is to die for.
Method
- Preheat the oven grill.
- Grill the lamb chops for 5 minutes on each side or until done the way you like them.
- Finely cop the pistachio nuts and bread crumbs in a food processor. Add the lemon rind and season to taste with salt and pepper. Add enough olive oil to bind the mixture without letting it become soggy.
- When ready, take the chops from the oven and pile on the pistachio mixture to make a thick crusty topping. Flash the chops under the grill until the topping is nicely browned and crisp. Serve immediately.
