Lamb Chops with Pistachio Crumb Topping

Lamb chops are always a favourite and the crunchy nut topping is to die for.

Method

  1. Preheat the oven grill.
  2. Grill the lamb chops for 5 minutes on each side or until done the way you like them.
  3. Finely cop the pistachio nuts and bread crumbs in a food processor. Add the lemon rind and season to taste with salt and pepper. Add enough olive oil to bind the mixture without letting it become soggy.
  4. When ready, take the chops from the oven and pile on the pistachio mixture to make a thick crusty topping. Flash the chops under the grill until the topping is nicely browned and crisp. Serve immediately.
