Janine’s Tropical Fruit and Nut Slices
This is an easy recipe to fill the cake tin for the weekend. Substitute the tropical fruit and nuts with mixed dried fruit and add a few glazed cherries.
Method
- Preheat the oven to 180 ºC (350 ºF). Grease a 20cm square cake tin.
- Combine sifted dry ingredients, sugar, fruit and nuts, and coconut in a mixing bowl.
- Add melted butter to the beaten eggs. Mix well. Add to the dry ingredients and mix to a soft dough. Press dough into the prepared pan and bake for 30 minutes until firm to the touch.
- Let it cool for 10 minutes before spreading it with the lemon icing. Leave in the pan until completely cold and cut into squares.
- Make the icing. Sift icing sugar into a mixing bowl, add the soft butter and lemon juice and mix to a stiff paste
