Janine’s Tropical Fruit and Nut Slices

This is an easy recipe to fill the cake tin for the weekend. Substitute the tropical fruit and nuts with mixed dried fruit and add a few glazed cherries.

Method

  1. Preheat the oven to 180 ºC (350 ºF). Grease a 20cm square cake tin.
  2. Combine sifted dry ingredients, sugar, fruit and nuts, and coconut in a mixing bowl.
  3. Add melted butter to the beaten eggs. Mix well. Add to the dry ingredients and mix to a soft dough. Press dough into the prepared pan and bake for 30 minutes until firm to the touch.
  4. Let it cool for 10 minutes before spreading it with the lemon icing. Leave in the pan until completely cold and cut into squares.
  5. Make the icing. Sift icing sugar into a mixing bowl, add the soft butter and lemon juice and mix to a stiff paste
