Iceberg Wedges with Blue Cheese Dressing
The crispy wedges of iceberg lettuce drenched in a blue cheese dressing are the perfect starter, or enjoy this marinated salad over a weekend lunch.
Method
- Make the dressing. Place the garlic, sour cream, mayonnaise, Dijon mustard, olive oil, balsamic vinegar and blue cheese in a food processor. Blend for a few seconds until just combined.
- Place a lettuce wedge on each plate, spoon some dressing over and scatter with chopped chives. Garnish with extra crumbled blue cheese. Serve at once.
