Haluvas
Haluvas is a Cypriot semolina cake soaked with a cinnamon syrup and topped with almonds. Serve cut into small squares with a good cup of coffee.
Method
- Preheat the oven to 180 ?C. Grease a large Pyrex baking dish.
- Make the cinnamon syrup. Combine the sugar, water and cinnamon in a saucepan. Bring to the boil and simmer for 5 minutes. Set aside to cool.
- Combine the oil, sugar and egg yolks. Beat until thick. Add the milk and mix well. Add the Tystee Wheat, cinnamon and salt. Beat well.
- Whip the egg whites to soft peak and fold into the batter. Pour the batter into the prepared Pyrex dish and sprinkle the nibbed almonds over the surface. Bake for 45 minutes until golden and cooked.
- Remove from the oven and pour over the Cinnamon syrup. Allow to cool. Refrigerate and serve cut into small squares.
