Grilled Butternut with Feta Cheese and Black Olives
This is an exciting way to prepare butternut. The salty feta and olives compliment the sweetness of the grilled butternut.
Method
- Boil the butternut in salted water for 10 minutes until tender. Drain. Place on a greased baking sheet and drizzle with 1 tablespoon of olive oil. Grill in the oven until nicely browned and even slightly blackened.
- Make the feta and olive topping. Place the feta cheese and garlic in a mixing bowl. Add the olive oil and mix with a fork. Add the olives and spring onions.
- When the butternut is ready, pile it onto a serving platter and spoon the feta and olive mixture on top. Garnish with the coriander leaves and plenty of ground black pepper.
