Grilled Butternut with Feta Cheese and Black Olives

This is an exciting way to prepare butternut. The salty feta and olives compliment the sweetness of the grilled butternut.

Method

  1. Boil the butternut in salted water for 10 minutes until tender. Drain. Place on a greased baking sheet and drizzle with 1 tablespoon of olive oil. Grill in the oven until nicely browned and even slightly blackened.
  2. Make the feta and olive topping. Place the feta cheese and garlic in a mixing bowl. Add the olive oil and mix with a fork. Add the olives and spring onions.
  3. When the butternut is ready, pile it onto a serving platter and spoon the feta and olive mixture on top. Garnish with the coriander leaves and plenty of ground black pepper.
