Green Pea Soup

Try this fresh tasting soup with buttered soft rolls for lunch or serve it as a starter at your next summer dinner party.

Method

  1. Heat the butter in a large saucepan, add onions and sauté until soft and translucent.
  2. Add peas, sugar, salt and pepper. Add chicken stock and simmer for 30 minutes.
  3. Puree the soup in a food processor. Reheat and serve immediately, sprinkled with finely chopped mint.
