Green Pea and Crispy Bacon Salad

If you need an excuse to eat sweet green peas, try this refreshing salad.

Method

  1. Cook the green peas in boiling water for 2 minutes. Drain and refresh under cold running water.
  2. Fry the bacon until crisp and break into rough pieces.
  3. Make the dressing. Whisk the oil, vinegar, salt, mustard and sugar in a small mixing bowl until well blended. Add the chopped mint.
  4. Transfer the peas and bacon to a salad bowl, pour over the dressing and garnish with fresh mint sprigs.
