Green Pea and Crispy Bacon Salad
If you need an excuse to eat sweet green peas, try this refreshing salad.
Method
- Cook the green peas in boiling water for 2 minutes. Drain and refresh under cold running water.
- Fry the bacon until crisp and break into rough pieces.
- Make the dressing. Whisk the oil, vinegar, salt, mustard and sugar in a small mixing bowl until well blended. Add the chopped mint.
- Transfer the peas and bacon to a salad bowl, pour over the dressing and garnish with fresh mint sprigs.
