Green Bean Salad with Baby Corn

This is one of my favourite salads that provide a refreshing crunchy contrast served with grilled fish or chicken.

Method

  1. Blanch the green beans for 3 minutes in boiling water. Drain, refresh and set aside to drain
  2. Combine the green beans, baby corn, red pepper, onion and olives in a salad dish.
  3. Whisk the remaining ingredients together and check the seasoning. Pour the dressing over the salad and toss before serving.
