Greek Style Pattypans

Method

  1. Blanch the pattypans in boiling water for 3 minutes. Drain.
  2. Place the remaining ingredients in a saucepan and add 150 ml water. Add the pattypans and cook for 10 minutes. Remove the pattypans and place them into a salad dish.
  3. Reduce the remaining cooking liquid by boiling rapidly for 10 minutes. Season to tsate with salt. Strain the cooking liquid and pour over the pattypans. Let it stand until cool and garnish with fresh parsley and grindings of black pepper just before serving.
