Grapefruit with Rum and Raisins
Grapefruit is a favourite breakfast fruit and prepared in this way, it is just perfect to serve for a special brunch.
Method
- Place the grapefruit in a glass bowl.
- Heat the sugar and water to boiling point, stir until the sugar has dissolved and boil rapidly for 2 minutes. Add the rum and raisins. Cool the syrup.
- Pour the rum syrup over the grapefruit, cover with plastic wrap and refrigerate overnight.
- Scatter with the almond and sprinkle with the cinnamon just before serving.
