Grapefruit with Rum and Raisins

Grapefruit is a favourite breakfast fruit and prepared in this way, it is just perfect to serve for a special brunch.

Method

  1. Place the grapefruit in a glass bowl.
  2. Heat the sugar and water to boiling point, stir until the sugar has dissolved and boil rapidly for 2 minutes. Add the rum and raisins. Cool the syrup.
  3. Pour the rum syrup over the grapefruit, cover with plastic wrap and refrigerate overnight.
  4. Scatter with the almond and sprinkle with the cinnamon just before serving.
