Goat’s Cheese Tarts
Serve goat’s cheese tarts for a light lunch or as a starter to a dinner party. They are easy to prepare and are popped into the oven 15 minutes before you start serving.
Method
- Preheat oven to 200 ºC (400 ºF). Grease a baking sheet.
- Heat oil in a saucepan; add the onions, thyme, sugar and vinegar and simmer, covered, over low heat for 30 minutes. Set aside and cool.
- Roll puff pastry out to 10 mm thick and cut out 4 x 10 cm disks. Place on baking sheet and brush with egg yolk.
- Place a tablespoon of the onion mixture in the center of each pastry round.
- Top with a slice of goat’s milk cheese and chill until ready to bake.
- To serve. Bake tarts for 10 minutes or until light golden in colour. Serve immediately with the green leaves and hazelnuts. Drizzle with lemon juice and olive oil.
