Goat Cheese Scones with Smoked Salmon

Why not get fancy, bake these goat cheese scones and enjoy a lazy Sunday brunch.

Method

  1. Preheat the oven to 200 °C (400 °F). Grease a baking sheet.
  2. Whisk the dry ingredients together in a mixing bowl. Using your fingertips, rub the butter into the dry ingredients until coarse meal forms. Stir the egg into the butter milk. Add the cheese and buttermilk mixture to the flour mixture. Stir with a fork just until the dough comes together. (Bits of cheese will still be visible.)
  3. Pat the dough out on a lightly floured surface into a 2 cm-thick round. Use a floured cookie cutter to cut out the scones. Gather scraps and cut out additional scones. Place the scones on the baking tray and bake for 12 minutes until golden brown. Cool the scones on a wire rack.
  4. Split the scones in half and spread bottom halves with butter. Divide the smoked salmon between the scones and top with a teaspoon of sour cream, dill sprigs and the remaining scone halve. Serve at once.
