French Style Roast Chicken
This is not a recipe as such, but a cooking technique that is favoured by French cooks when roasting chicken to perfection. The secret is fiercely high heat and only twelve minutes per 500 gm of weight roasting time. The result: plump, moist chicken with golden brown crispy skin.
Method
- Preheat the oven to 240 ¢ªC (450 ¢ªF).
- Season the chicken well and rub with lemon juice. And olive oil. Set aside for 1 hour. Weigh the chicken and calculate 12 minutes cooking time for each 500 gm of the chicken¡¯s weight.
- Place the chicken on a roasting rack and roast for the calculated time period. At the end of the cooking time, the juices will run clear when a test needle is !ed into the thickest part of the thigh. Remove the chicken from the oven and cover with aluminum foil. Let it rest for 10 minutes before carving .
