Fortune Cookies

Fortune cookies were first baked in California and have become synonymous with take-out Chinese dinner. Write your own fortune on a piece of paper and enclose it in this very tasty cookie flavouerd with sesame oil. Far superior to any store bought version.

Method

  1. Pre-heat the oven to 200 ¢ªC (400 ¢ªF). Grease a cookie sheet and draw 8 cm (3 inch) circles on the cookies sheet, spaced well apart.
  2. Combine all the ingredients in a bowl and mix until the batter is smooth and creamy.
  3. Using a tablespoon, pour the batter from the tip of the spoon onto the cookie sheet into the centre of the circle. A perfect circle should be the result. Do not bake more than 3 cookies at a time. Each batch must go on a clean, cooled and re-greased cookie sheet.
  4. Bake for 3 to 4 minutes until the edges turn golden brown and the centre is still pale. The cookies are now ready to be shaped.
  5. Quickly remove the cookie from the cookie sheet with a spatula. Place a fortune in the centre and fold the cookie in half over the paper. Grasp both ends of the cookie, place the middle of the folded edge on the rim of a cup and gently but firmly pull down on the end to curve the cookie. At the same time, run your thumb over the edge to make it fold if it doesn¡¯t happen automatically while bending. Hold the curve for a few seconds, then set the cookie, tip down, in a muffin cup to cool and crisp. Repeat with remaining cookies. Store in an airtight container in the refrigerator.
