Feta Cheese Tartlettes

These cheese tartlettes are oven ready in an instant and provides an excellent choice as starter or a light lunch. Serve on a bed of saladgreens with a splash of French dressing.

Method

  1. Preheat oven to 200 ºC. Grease a baking sheet.
  2. Cook onions, red wine vinegar, sugar and olive oil over low heat, covered, for 30 minutes until soft. Cook uncovered for 5 minutes over high heat to brown the onions slightly.
  3. Cut puff pastry into 4 rounds with diameter 1,5 cm greater than diameter of cheese rounds. Place onto greased baking sheet and chill pastry for 15 minutes.
  4. Brush pastry with eggwash.
  5. Place one tablespoon of onion relish in centre of each pastry round. Top with feta cheese and sprinkle with pinenuts. Chill until ready to bake.
  6. Bake for 10 – 12 minutes until well-risen en golden brown.
