Feta Cheese Tartlettes
These cheese tartlettes are oven ready in an instant and provides an excellent choice as starter or a light lunch. Serve on a bed of saladgreens with a splash of French dressing.
Method
- Preheat oven to 200 ºC. Grease a baking sheet.
- Cook onions, red wine vinegar, sugar and olive oil over low heat, covered, for 30 minutes until soft. Cook uncovered for 5 minutes over high heat to brown the onions slightly.
- Cut puff pastry into 4 rounds with diameter 1,5 cm greater than diameter of cheese rounds. Place onto greased baking sheet and chill pastry for 15 minutes.
- Brush pastry with eggwash.
- Place one tablespoon of onion relish in centre of each pastry round. Top with feta cheese and sprinkle with pinenuts. Chill until ready to bake.
- Bake for 10 – 12 minutes until well-risen en golden brown.
